I had mentioned in my previous post that you can’t really go wrong when cooking anything with kimchi, say, noodles, rice, dumplings, etc. Here is another very popular kimchi-based dish that is relished by many Koreans and kimchi lovers.For 2 servings
Main ingredients:
cooked rice (2 servings)
kimchi (1 1/2 cup, chopped coarsely)
bacon (6, or pork belly meat)
egg (1)
garlic (4 cloves, sliced)
shitake mushroom (4, or enoki mushroom)
sesame oil (1 tbl)
sesame seeds
salt

Chop kimchi coarsely.2.
Cut bacon bite-size and slice mushrooms and garlic.3.
Scramble an egg and set it aside.4.
Glaze a frying pan with oil and stir-fry bacon and garlic together.5.
Add kimchi and mushroom shortly after.6.
Add cooked rice.7.
Once rice is mixed in, add sesame oil and some salt.8.
Mix in the scrambled egg from Step 3 and add a dash of sesame seeds before serving.

Is this not easy enough for you and Corrie? :P If you have some Kimchi with you, try making this Kimchi Fried Rice. (I know this is your favorite :D) How about Tofu Kimchi that I posted today? Hmm... if they are still too difficult, you need a private tutoring from gomo...
This looks so good! I love kimchi fried rice but it can be a bit difficult ot measure how much kimchi to add because depending on the brand/homemade, it can vary in saltiness.
I'm also thinking of making a fried-rice style bibimbap (ie using the same ingredients) because I don't have the sizzling pot required for dolsot bibimbap.
Do you think it'll work?
Making bibimbap like fried-rice so that it becomes more like dolsot bibimbap is such a good idea! I think I'll give a try, too.
